Cooking. It's not something that comes naturally for me; in fact, it's quite "unnatural" (in my case at least). It's much easier to pop a frozen dinner (like lasagna or pizza) in the oven or whip out some tuna helper, than to cook meals from scratch; but what a difference it makes! As most of y'all know, I'm not very savvy in the cooking department and it's been a constant struggle planning and creating meals for my family. However, having kids changes things and I am now more motivated (and dare I say, excited) than ever, to make well-planned meals that are both delicious and healthy. I've been using this website to find tasty recipes my family will enjoy and it has certainly been successful! Oddly enough, I find myself looking forward to cooking so much that I bought a lovely little recipe box and "guilt-free" cookbook! :o)
Anyhow, tonight we had Chicken Fried Chicken with mixed veggies, mashed potatoes and brown gravy. Granted, this meal was not from the guilt free cookbook, but it was yummy and totally worth it! Mmmm!Wow! That looks so tasty! Good for you girly. I am definitely going to have to try that recipe. These days I use my oven and slow cooker a lot. This is what works best for my busy schedule. My sister gave me a delicious oven baked ginger chicken recipe a few years back that I love. I forget the exact amounts and have to verify them with my sister.
ReplyDeleteIngredients: 1/3 cup of soy sauce, 5 cloves of minced garlic, 3/4 cup of brown sugar, 2 tsp of ginger
Combine all ingredients and pour on chicken. Put chicken in oven at 370. Baste chicken every 15 minutes. 1 hour baking time.
If, when I talk to Belky, she tells me I got any of the measurements wrong, I'll let you know.

1 bottle of KC brand barbecue sauce (mesquite flavor is my favorite but the honey flavor is good too). There are many brands of barbecue sauce out there like Kraft etc. but KC is the best one in my opinion.
preheat the oven at 350
arrange chicken drumsticks, skin on, in an oven safe pan and pour entire bottle of barbecue sauce over it.
bake uncovered until chicken juices run clear (in my oven it takes 45 min)
Take out and enjoy.
Goes well with white rice and a salad.
I took it once for a church potluck and one of the ladies called me later to ask for the recipe. She was shocked to find out that something that tasted that good could be so easy to make :o)
